Melon, Candied Pecan, Silky

 

Named after Olman Sauceda’s daughter, Belén is from a rare and highly prized varietal called Chiroso. While it was initially discovered in Colombia in the early 2000s, genetic testing shows its roots as an Ethiopian landrace. The name “Chiroso” is a rural Colombian slang term for “elongated,” referring to the shape of the beans. Just as we don’t know how Chiroso came to Colombia, we also don’t know how it ended up on Olman’s farm in Nicaragua — but we’re certainly glad it did!

Overall, Chiroso is known for having floral notes similar to a Gesha, but with a sweeter, fuller body, some herbaceous flavors, and a silky mouthfeel. This is exactly what we experienced, with notes of gentle melon, the rich and complex sweetness of candied pecan, and a super silky mouthfeel.
